Jätskiä popcornista



Uusimmassa Glorian ruoka&viini-lehdessä oli resepti popcornjäätelöön. Popcornia ei tule juurikaan ikinä syötyä, mutta resepti jäi kaivelemaan mieltä, joten pakkohan sitä oli kokeilla. Jäätelö nautittiin kinuskikastikkeen, suolapähkinöiden ja popcornin kanssa. Ja olihan se hyvää - todella hyvää. Suolaisen ja makean yhdistelmä toimii! Kannattaa kokeilla.


Popcornjäätelö
n. 8 palloa

1 rkl rypsiöljyä
0,5 dl maissinjyviä

3,5 dl kuohukermaa
5 dl täysmaitoa
0,5 dl suola
4 huoneenlämpöistä keltuaista
0,75 dl sokeria

Valmista popcornit pakkauksen mukaan. Mittaa paksupohjaiseen kattilaan kerma, maito ja suola. Lisää popcornit ja anna kiehahtaa. Ota pois liedeltä ja anna makujen imeytyä noin tunnin verran. Siivilöi popcornit maito-kermaseoksesta. Puristele kaikki neste pois popcornimassasta ja heitä loppumassa pois. 

Vatkaa keltuaiset ja sokeri vaaleaksi vaahdoksi. Kuumenna popcornmaitoseos kiehuvaksi ja lisää ohuena nauhana sokerimunaseokseen koko ajan vatkaten. Kaada koko seos takaisin kattilaan ja lämmitä miedolla lämmöllä noin 10 minuuttia tai kunnes seos paksuuntuu. Jäähdytä huoneen lämpöiseksi kylmässä vesihauteessa.

Kaada massa pakastuksen kestävään astiaan (tilavuus noin litra). Peitä kelmulla ja laita pakastimeen. Sekoita massaa lusikalla noin tunnin jälkeen. Anna olla pakastimessa vähintään 6 tuntia (mielellään yön yli). Ota jäätelö huoneenlämpöön muutama minuutti ennen annostelua. Tarjoa kinuskikastikkeen, suolapähkinöiden ja popcornin kanssa.

I saw a recipe of popcorn ice cream on a finnish food&wine magazine. I don't eat popcorn that often but some how it stayed on my mind and I had to try it. It was served with butters cot sauce, salted nuts and popcorn and it was great. In this case combination of sweet and savory work great together. This is worth to try.

Popcorn Ice Cream
circa 8 balls

1 tbs oil
0,5 dl corn kernels

3,5 dl whipping cream
5 dl whole milk
0,5 ml salt
4 egg yolks at room temperature
0,75 dl sugar

Prepare popcorn according to the package. Measure cream, milk and salt into thick-bottomed saucepan. Add popcorn and bring to boil. Remove from the heat and let flavors get steady for about an hour. Strain the mixture and knead all the liquid out of the popcorns and throw popcorns away.

Whisk egg yolks and sugar until light foam. Heat milk-popcorn mixture to a boil and add it as a thin string to the sugar-egg mixture, constantly stirring. Pour the entire mixture back into the saucepan and heat over low heat for about 10 minutes or until the mixture thickens. Cool to room temperature in a cold water bath.

Pour into a freezer-proof container (volume of approximately one liter). Cover with plastic wrap and place in the freezer. Stir the mixture with a spoon after one hour. Let it freeze for at least 6 hours (preferably overnight). Take ice cream at room temperature for a few minutes prior to serving. Serve with butters cots sauce, popcorn and salted nuts.
