175 g kookoshiutale
2 kananmunaa
150 g sokeri
Vatkaa ensin kananmunat sekaisin ja lisää sokeri koko ajan vatkaten. Vatkaa vaahdoksi. Lisää kookoshiutaleet ja anna odottaa hetki. Asettele pellille kahvilusikoiden avulla ja jätä keksien väliin isot välit, jotta ne eivät tartu toisiinsa paiston yhteydessä. Paista 200 asteisessa uunissa 10-12 minuuttia tai kunnes ovat saaneet sopivasti väriä. Anna jäähtyä ennen siirtämistä pelliltä.

For the weekend I had to come up with some gluten-free treats, which I browsed through the internet. I decided to make coconut cookies. At home, I noticed that I didn't have enough grated coconut, but I still desided was less than enough, but I decided to have a go at it.
Old cookie molds, which I brought from Åland, will see day light as I made a decoration for kitchen window out of them. I gathered a frame from birch twigs and attached molds to it with pieces of string. To get some Christmas spirit you can change strings into red silk string.
Coconut cookies (20 pieces)
175 g grated coconut
2 eggs
150 g sugar
Whisk a bit of the eggs at first and then add sugar whisking all the time. Whisk until mixture becomes foam. Add the coconut and let it wait a while. Using two teaspoons set pieces of dough onto baking sheet covered with baking paper. You need to leave quite much space between each cookie to prevent them to stick each others. Bake in 200 degree oven for 10-12 minutes or until cookies look ready. Let cool before taking them out of the baking sheet.
